Irish Cream Tiramisu Dessert

This no-bake tiramisu dessert is simply delicious, and you can whip it up in no time when hosting a Christmas party. It is made with Irish cream liqueur and is bound to impress.

Ingredients

  • 4 x Eggs
  • 100g Castor sugar
  • 1 x 500g Mascarpone
  • 2 x Teaspoons cocoa powder
  • 1 x 100ml Baileys Irish cream liqueur
  • 1 x Packet of sponge fingers biscuits
  • 300ml Strong coffee (mix two tablespoons of coffee granules with 300ml boiling water)
  • 25g Dark chocolate

Instructions

  • Separate the yolks and egg whites into two separate large bowls.
  • Whisk egg whites until stiff.
  • Mix the sugar with the egg yolks and whisk until it is foamy and thick (takes about five minutes).
  • Add the cream liqueur and mascarpone into the egg yolks and whisk until no traces of the cheese is visible.
  • Add the egg whites to the mascarpone mixture and carefully fold it in to retain most of the air.
  • Pour the coffee into a shallow dish before dipping a few sponge fingers into it. Do this for only a few seconds because you don’t want it to turn soggy.
  • Layer the soaked sponge fingers into a serving dish (about 20 x 15cm). Layer about half the biscuits into the dish before spreading half of the mascarpone mixture over it. Grate some of the chocolate over the creamy mixture. Do another layer of sponge fingers and creamy mixture.
  • Cover the dessert and allow it to chill overnight.
  • Grate more chocolate over the top and dust lightly with cocoa powder before serving.

Christmas Rocky Road Dessert

This festive rocky road dessert is so easy to make, and you can use any leftover biscuits and sweeties to make your creation. The kids can join in the fun and help to make it.

Ingredients

  • 100g Butter (cut into little cubes – save extra to add to tin)
  • 100g Mixed dried fruit (cherries, raisins, etc)
  • 140g Golden syrup
  • 250g Biscuits (any biscuits like chocolate or shortbread biscuits)
  • 75g Mixed sweets (marshmallows, jelly beans, candy canes, etc)
  • 75g Nuts
  • 400g Chopped chocolate (plain or milk)
  • 2 x Tablespoons of sprinkles or sweets for decoration

Instructions

  • Butter and line a square tin (20cm) or silicone mould.
  • Break the biscuits into smaller pieces (smaller than pea-size and it mustn’t be too chunky)
  • Chop the nuts into smaller pieces and mix them with the biscuits. Half larger pieces of sweets and dried fruit into smaller pieces and add them to the biscuits and nuts.
  • Melt the syrup, butter, and 300g of the chocolate over low heat, stirring occasionally.
  • Pour the melted mixture over the nut/sweetie/biscuit mixture until everything is covered.
  • Pour the mixture into the tin and level the top – it doesn’t have to be entirely smooth.
  • Melt the remaining 100ml chocolate before drizzling it over the top and adding the decorations. Keep it in the refrigerator for three hours to chill before cutting it into squares. You can keep the squares in the fridge for up to four days.
